Feature Request: Support customized LLM provider

I hope that the LLM API services provided by model providers compatible with the standard OpenAI Chat Completions API interface can be supported.

Of course, it would be even better if claude-mem could support the OpenAI Responses API compatible interface and the Anthropic Claude Messages API compatible interface.
